I would have to disagree... Enchanting isn't as self sufficient as you think.
At higher levels, you don't get levels for disenchanting anymore. Also, the materials for the enchants require a sick amount of materials to do it. The problem with it is that a lot of the time the enchants you have are usless to you (like why would I put a +str enchant on something as a mage), so you try to sell the enchants. Well, why would someone buy a +15 str enchant from YOU when they could buy a +20 str enchant from someone else (just an example)? See what I mean? It requires a lot of money and time to invest to get your enchanting full up. Once you are maxed, you need a good guild that will accept you as their main enchanter, so that whenever rare enchants drop in raids then YOU can get them. A lot of that requires that you give out the enchants for free to guildies too. So you could always sell them to people outside of the guild, but it's still difficult.
Anyway, for a Paladin I would suggest a few things. Mining must be one of them, hands down. It's a good gathering profession and you can make money off of it by itself. Now you gotta pick something that can be supplemented by mining. I'd say Engineering is a good one, because those epic goggles are teh sex. Jewelcrafting is a good one too, and it is in high demand still. Of course you can never go wrong with blacksmithing, because you are going to be wearing plate armor.
